April 16 2015 Appleton WI-Bars and restaurants across the country typically have special events to celebrate “Cinco de Mayo.” While it might be strange to see an Irish bar making margaritas one Appleton Wisconsin restaurant is the perfect location to visit when celebrating this holiday that commemorates democracy and independence. Since this year it falls inconveniently on a Tuesday they have simply decided to stretch out the celebrating as long as they can.
“This will be our third year open for business on May 5th and it seems like every year the party gets bigger” said Kimberly Finnell one of three principal owners behind Osorio’s Latin Fusion restaurant. “By the time it rolls around people are looking for reason to celebrate the end of winter and with a focus on fun food and drinks this is the perfect situation for them.”
Known for their signature margaritas and spicy food they have attracted a strong and dedicated following since opening in October of 2012. Previous years the celebrations have included extended happy hours with discounted pricing on their specialty cocktails and collection of imported beers and special menus featuring food and tequila pairings. While they are still working out the final details for this year’s event one thing that is sure to be part of it all is more menu specials.
“For many people coming here for this celebration will be their first time visiting our restaurant” said Executive Chef and co-owner Liborio Torres. “It makes it the perfect opportunity to go back through my family’s recipes and introduce some of my favorite dishes.” Along with the new surprises favorites from previous Cinco de Mayo years including taco specials and select quesadillas are sure to be offered as well.
Over the years the holiday has morphed from being about democracy to being one that celebrates diversity as well and Finnell is proud that her restaurant and staff are part of that celebration. “Our success is due in no small part to many different parts of the community coming together. We’ve definitely become a local’s favorite and we’re thankful for that every day.”
