Key West Floridas Newest Head Chef prepares For Busiest Season yet

Nichol knew that even though she had as much freedom as she wanted there were certain items that she knew better than to mess with. “Some of the award-winning dishes that we have become known for over the years like our crab cakes and key lime pie will still be available. In addition however there will be several new dishes that we have been creating over the last several months running as specials and tweaking the recipe on that we are sure will become signature award-winning items on their own.”

It isn’t just their dinner and lunch menus that she has been working with. Key West is the number one choice for island weddings and the Roof Top Café hosts upwards of a thousand wedding events a year from rehearsal dinners to ceremonies and receptions. Nichol is creating a series of special menus that will allow couples to create the perfect reception menu that combines traditional items with exciting dishes that feature the fresh seafood and island flavors the restaurant has been synonymous with for over the last 30 years.

With the economy in its best shape in years and airfares continuing to drop as fuel costs decrease Key West Florida may set a record for visitors this year. Chef Nichol has three words to say about that: “Bring them on.”
