Simply the best Italian food I have ever tasted in Dubai. There I said it. I can’t be clearer than that and there’s really no point writing any further. Oh all right then if you insist on an explanation I’ll give you one.



I am not by any means unique in saying this Italy’s cuisine is my favourite. Nor am I setting the world on fire by stating although consisting of relatively straight-forward ingredients to cook Italian food well is pure art. Therefore many of you will be pleased to hear if you consider Sicilian culinary delights an art form BiCE Mare in Souk Al Bahar Dubai is the gastronomic equivalent of the Louvre. It is the best place to witness masterpiece recipes in this city.



Specially created by Executive Head Chef Francesco Guarracino every one of BiCE’s dishes sampled was complex wonderfully fresh and innovative but above all delicious.



Whether it was the spectacularly rich sea urchin linguine the smokiest smoked octopus tentacle the porcini mushroom risotto cooked at our table then tossed in a hollowed wheel of parmesan for added flavour or the turbot fillet baked with artichoke and black truffle the attention to detail was evident throughout and heightened the experience to a level yet unseen during the years this column has been knocking about.



Even from the first course of burrata atop fresh vine leaves and basil foreshadowing the quality that was about to follow the produce spoke for itself. As chef Francesco told us he travels to Italy once every three months to keep up to date with trends and suppliers. His wife is from Sicily and he ties up with producers down there. That means there is a steady stream of seasonal goodies ever-evolving into brilliant meals that end up on your plate at BiCE you lucky things so you better try them. Capiche In short wild horses couldn’t keep me away from BiCE. The dining room is elegantly designed yet is not overbearing the staff are courteous and knowledgeable explaining every course and the drinks cellar is well stocked. Sat opposite the Dubai Fountains that often go off to the tune of Con Te Partiro you’d be hard-pressed to find a better location to enjoy this wonderful bounty.
