Iconic Key West Restaurant Prepares For Another Busy Season

Summary: Very few restaurants survive the first three years of business; a rate that falls even lower in a popular tourist location. Yet one iconic Key West restaurant readies itself for its 31st year of business.

 

September 30 2014 Key West FL-With the end of hurricane season and the start of Fantasy Fest both right around the corner many people in Key West Florida are getting ready to try their luck in the ultra-competitive arena of running a successful restaurant. One restaurant however the Roof Top Café has been doing it so well for so long that they are ready to slip right back into the high demands of the peak season. That doesn’t mean however that they have stopped to rest on their laurels.

“Every year during the slower summer months I always make two separate lists” said Norman Vogel longtime owner with his wife Wednesday of the Roof Top Café. “One of them is the housekeeping/maintenance list. After a long season exposed to the tropical sun and weather there is painting to be done railings to be replaced and that sort of thing. The second list is one item long and it is how can we make ourselves better than the year before?”

In years past this list has included expanding their wedding services and opening a tequila themed bar and eatery on the property both of which have been tremendously successful. This year’s list took on a sense of urgency when they parted ways with their executive chef after several years together. Mr. Vogel knew that not only would his new chef have to be able to recreate the signature dishes that attract his clientele from around the world but they would also have to be able to put their own stamp on the menu as well. Enter Sarah Nichol.

“Sarah has the perfect blend of experience from working in fine dining restaurants to overseeing destination weddings with hundreds of guests” Mr. Vogel said when announcing her hiring. “I have always been proud of our reputation among the Key West restaurants and now that she will be running the kitchen I am more confident now about the potential for success than I have been at any point in our history.” Here’s hoping that Ms. Nichols helps usher in another great thirty years of culinary excellence.
